If you make this recipe using Seville Oranges it will be the traditional bitter orange marmalade. I had lots of navel oranges on my tree and decided to try a couple of different variations to this recipe: one based on Whisky Seville Marmalade and another based on Mandarin Marnier Marmalade. I made the basic recipe and split it in half at the end, adding whisky to one half and cointreau to the other - you can make it all with one or the other or try another flavour altogether. 1kg Oranges 2 … [Read more...]

Strawberry & Fig Jam Recipe
I love new twists on my 'old favourite' recipes for preserving fruits and vegetables, and Strawberry & Fig Jam is now firmly on my list of new favourites. My strawberries are producing copiously this year and, now that I've figured out where the birds were getting in, I'm harvesting a good supply. Any that are surplus to requirements at the time, I just hull them and freeze them whole (see also Freezing Fruit). Also in my freezer were some figs that really needed to be used before the … [Read more...]
Cinnamon Blueberry Jam Recipe
Blueberries are wonderful plants to have in the garden or just in a pot; they are incredibly healthy and nutritious - and they are wonderful in this Cinnamon Blueberry Jam Recipe. For other blueberry recipes, see the links at the bottom of this post. 1 kg blueberries (I used frozen) 2 tbsp lemon juice 4 cinnamon quills 1kg jam setting sugar (or use ordinary sugar and add 1 pkt pectin) I really like cinnamon so I added another 2 tsp cinnamon as well. You could add a tsp of cloves or a … [Read more...]
Blueberry, Blackberry & Grape Jam Recipe
I love combination jams because they are a great way to use fruit that you have (either fresh or frozen) but don't have enough of anything to make a single fruit jam. They also provide a wonderful range of flavours. This jam recipe is courtesy of Chelsea sugar who make a great Jam Setting Sugar that allows you to make a quick and simple jam. You can also easily scale the recipe up or down because you just use equal quantities of fruit and sugar. Juice and peel of 1 lemon, large pieces … [Read more...]
Orange Plum Jam Recipe
Whenever I have a bumper crop of plums, I freeze them for making jams and sauces later in the year. I decided to try some different recipes rather than just using my tried and tested ones. I know that citrus really brings out the flavour of berries so I thought "why not plums as well". 1 kg Plums, stones removed (I used frozen) Zest of 2 Oranges 1 kg Jam-setting Sugar 1 knob butter (10g) 50 ml Orange-flavoured liqueur (optional) Finely chop plums - use a food processor if you want. I … [Read more...]
Brandied Lime Marmalade Recipe
A few years ago I made a lime marmalade but it was so tart that there was no way you could even just have a scraping on your breakfast toast. I tried putting a spoonful in cooking but eventually just threw it out and never made it again. My mother asked recently if I had made any lime marmalade because she really likes the Roses Lime Marmalade for breakfast. So the challenge was on. Rummaging through my old recipe folders I found this one that I had made 20+ years ago. I still had some limes … [Read more...]
Four Berry Jam Recipe
I grow as many different berries as I can in my garden because they are so easy to grow, freeze really well, and are great for cooking right throughout the year. Sometimes I end up with only a small amount of each of the different types of berries left in the freezer, not enough to make anything specific with any of them. This year I tried making a Four Berry Jam recipe with strawberries, raspberries, blackberries and blueberries. The amount of each doesn't really matter and the end result is … [Read more...]
Quick & Easy Berry Jam
Once you have berries in your freezer, you can quickly make some tasty jam whenever you need it. The wonder ingredient is Chelsea's Jam Setting Sugar. 1 kg Fruit 1 kg Chelsea Jam Setting Sugar A knob of butter (10g) Crush the fruit coarsely with a potato masher, fork or food processor. Or I simply heat the frozen berries until they are a bit mushy. Put the fruit and jam setting sugar into a large, heavy based 6 litre pot (I used a preserving pan). Heat over … [Read more...]
Grapefruit Marmalade
Grapefruit Marmalade is my favourite - just the right blend of bitterness combined with a caramelly sweetness. I find many of the store bought varieties just too sweet. My grapefruit tree isn't big enough yet to produce any fruit (well, it might have been this year but it sulked after I went away for a month in spring - which turned out to be a very dry month). Thankfully my friend Debbie has a grapefruit tree that produces well, so I was the grateful recipient of a big bag full. I thought … [Read more...]
