Whisky Orange Marmalade Recipe

If you make this recipe using Seville Oranges it will be the traditional bitter orange marmalade. I had lots of navel oranges on my tree and decided to try a couple of different variations to this recipe: one based on Whisky Seville Marmalade and another based on Mandarin Marnier Marmalade. Once you have berries in your freezer, you can quickly make some tasty jam whenever you need it.  The wonder ingredient is Chelsea's Jam Setting Sugar.     1 kg Fruit 1 kg Chelsea Jam Setting Sugar A knob of butter (10g) Crush the fruit coarsely with a potato masher, fork or food processor.  Or I simply heat the frozen berries until they are a bit mushy.
