Lemon, Honey & Ginger Syrup
Lemon, Honey & Ginger Syrup is perfect for soothing those winter sore throats and giving a boost to your immunity. It is quick and easy to make and a perfect gift for someone who's not feeling well. Just add a couple of spoonfuls to a cup of hot water. You will need: a biggish piece of fresh ginger (about 100g) 1 cup honey 1 cup fresh lemon juice (6 medium lemons) Slice the ginger thinly. Boil ginger with 1 cup water in a small heavy-based saucepan for about 5 minutes, stirring … [Read more...]
Lemon & Lavender Cheesecake
I was watching a lifestyle programme about a lavender farm and they made a by all accounts delicious lavender and lemon cheese cake. I am always looking for interesting things to make with produce from my garden - particularly edible flowers - so this had to be a 'must try'. They didn't really give a recipe but I scribbled down some key points and ingredients, and decided to give it a try. Biscuit base: 250g packet plain sweet biscuits e.g. round wine 150g … [Read more...]
Delicious Lemon Cake Pudding Recipe
This recipe never ceases to amaze me: there is only a quarter of a cup of flour and the mix is really runny when you put it into the baking dish but then a lovely light spongy cake rises out of the middle leaving a delicious lemony sauce around it. I first discovered it when I was at University and my boyfriend at the time made this for me as his 'seduction dessert'. He had prepared a double recipe and made the mistake of daring me "I bet you can't eat half". I did manage to eat half (this … [Read more...]
Lemon Gelato and Blueberry Buttermilk Sherbet
After my previous success with Rose & Raspberry Sorbet, I wanted to try my hand at gelato and sherbet to see what the difference was between them all. I had some buttermilk (whey) left over from my cheese-making, so chose Blueberry Buttermilk Sherbet - another Martha Stewart recipe; and Lemon Gelato from the Ice cream Maker Recipe book. The sherbet is slightly creamier than the sorbet and the gelato is creamier again. There are two types of gelato: the sugar syrup gelato that I made has … [Read more...]
Dehydrating Citrus
In an earlier post I described my not very successful attempts at drying herbs in a dehydrator. I decided to give it another go, this time with citrus, after being inspired by some delicious dried lemon served as an edible garnish on a dessert at a function I went to. According to the instructions in the manual, you scrub whole fruit under warm water and then cut into 5mm slices. Well actually that was the instruction for lemons. For oranges, the instruction was to cut them into 0.5mm … [Read more...]

Moroccan Preserved Lemons
Preserved lemons are an essential Moroccan condiment used to enhance many Moroccan dishes both as an ingredient and as a garnish. They can be quite expensive to buy but incredibly easy to make. Slice the lemons as if to quarter them but don’t cut all the way through – leave them connected at the base. Cover the cut inside surfaces liberally with salt and press them tightly into a large jar (or several smaller ones). Add extra lemon juice to cover the lemons - the lemon juice and salt … [Read more...]
Microwaved lemon honey
When I was searching to find out what the difference was between lemon honey and lemon curd (and discovered there wasn't), I found a very different recipe that alternated microwaving and beating the mix. I decided to try it out, particularly as it has a lot less sugar than the recipe I usually use. 1/4 cup sugar 4 eggs 125g butter 6 lemons, juiced zest of 2 lemons Beat the sugar and eggs together in a large microwaveable bowl using an electric beater until creamy. Cut butter … [Read more...]
Lemon Curd
One of my favourite lemon recipes is lemon curd – I’ve been waiting (not so) patiently for my lemons to ripen and, as you can see in the photo, I couldn’t wait for all the green to be gone from the fruit before I made my first batch. I’m not sure what the difference is between lemon curd, lemon honey and lemon butter. My recipe is labelled lemon honey, Australians apparently call it lemon butter, but most people that I’ve talked to know it as lemon curd. Whatever you call it, it is delicious … [Read more...]
