Moroccan Spiced Tomato Soup

P1040454There is nothing like piping hot tomato soup and freshly baked bread for a satisfying winter lunch.  If you are having friends around, it is nice to have something just a little bit different and that is quick and easy to make.  This was a creation that I first put together some time ago and has had great response from many friends – who have asked for the recipe.  There are many easy variations!

P1040456Take a tin of tomato soup concentrate, a tin of Moroccan spiced tomatoes and a tin of chickpeas (drained).

Add ingredients together and heat in a saucepan (or in a jug in the microwave).  Add extra water if you want.

Serve and enjoy!

You can also make Indian spiced tomato soup with chickpeas or lentils; or Mexican spiced tomato soup with beans.  You could even get creative with your own spices!
