I described my first attempt at cheese making in an earlier post. I made a deliciously simple whole milk ricotta cheese and had the benefit of some nutritious whey as well. I was keen to find a recipe that would use both of these, so was delighted when I discovered a recipe for whey crepes served with ricotta cheese and fruit – perfect for a weekend breakfast.
Recipe
3 eggs
1 cup flour
2 tbsp melted butter
1 1/2 cups whey
1 tbsp sugar
Break eggs into a food processor. Add flour, butter, whey and sugar. Process until smooth. Chill for at least an hour (batter will keep up to 2 days so make the night before if cooking for breakfast). Cook crepes in a lightly buttered non-stick pan.
Cooked crepes
Soft homemade ricotta
Sliced fresh fruit, stewed fruit or jam
Pure maple syrup (or I used a Lime & Vanilla Syrup)
