Plum Brandy

P1080141What can you make when you’ve made Plum Jam, Spiced Plum Butter, Spicy Plum Sauce, Plum Crumble, Stewed Plums and you’ve still got plums (fresh or frozen) left?

This year I made some Plum Brandy.  It has a gorgeous rich fruity flavour and is very easy to make.  The rich red colour makes it perfect for gift giving in decorative bottles.

1 kg dark red plums (I used frozen plums)
2 cups white sugar
500 ml (2 cups) vodka
125 ml (1/2 cup) brandy

Halve and pit the plums and put in a large jar. Add vodka, brandy and sugar – shake to dissolve sugar.

Most of the recipes I saw simply put all the ingredients in together. One stewed the plums a little first with the sugar. Because I started with frozen plums, I stewed them gently with the sugar to defrost them. When cool I added them to the vodka and brandy.

Seal and leave to brew in a dark cupboard for 2 months, shaking occasionally.
Strain and decant into clean bottles. Leave to mature for at least another month.

Frozen plums
Stew gently with sugar

Put in glass jar with vodka and brandy
Seal and leave for 2 months

Strain into a bottle and leave a further month.
Makes a great gift in a decorative bottle
