Healthy Banana Icecream Recipe

I couldn’t believe that a delicious recipe for icecream could be this simple. Even more amazing is that whipped up frozen bananas do actually have the consistency of traditional icecream.  And it is healthy!

Slice bananas and freeze until solid. Place frozen bananas in a food processor and process until smooth and creamy (thawing the bananas for 5 minutes first makes it easier to blitz). Eat immediately or refreeze if desired to use later. If using later, remove from freezer a few minutes before use to allow to soften.

Take ripe bananas
Slice and freeze
Put in food processor with any other desired ingredients

Process until smooth and creamy
Serve immediately
Or put in freezer for later

You can just use one banana or make a whole lot.  I’ve taken to freezing them in sandwich bags of 2 sliced bananas each – just put the slices in the bag, spread them out a bit and seal it, then put them in the freezer, no need to freeze them on a baking tray first.

You can easily mix in any combination you like of other ingredients to create different flavours.  You can stick to adding other healthy ingredients like berries, yoghurt, nut butters and honey or you can be a bit more decadent with things like chocolate or nutella. The creative stage is yours….

These are some I’ve tried:

  • 2 frozen bananas
  • 1/4 cup thick Greek yoghurt
  • 1 tsp vanilla essence
  • 2 tbsp honey

 

 

Blueberry & cinnamon banana icecream

  • 2 frozen bananas
  • ¼ cup frozen blueberries
  • 1 teaspoon vanilla essence (or 1/2 tsp cinnamon)
  • extra blueberries for topping

  •  2 frozen bananas
  • 2 tbsp peanut butter (or any nut butter)
  • ¼ tsp vanilla essence
  • sea salt to taste (if desired)
  • roasted peanuts for topping

  • 2 frozen bananas
  • 1/3 cup roughly chopped frozen strawberries
  • 2 tablespoons cream (you can use yoghurt but then it won’t be strawberries & cream – which sounds better)

 

 

Nutella Banana Icecream

  • 2 frozen bananas
  • 3 tbsp Nutella (chocolate hazelnut spread)

 

Chocolate Maple Banana Icecream

  • 2 frozen bananas
  • 3 tbsp cocoa powder
  • 2 tbsp maple syrup

 

Mmm perhaps one with coconut cream and shredded coconut….
