I’ve harvested a good crop of potatoes from my planter bags and have been looking for something different from the usual to make with them. I found this potato waffle recipe from a very old magazine cutting and decided to try it out for brunch.
4 large potatoes (about 800g), grated
1 large onion, grated
3 eggs, lightly beaten
1 tbsp olive oil
Combine potatoes, onion, eggs and oil in a bowl. Drop about 1/4 cup mixture onto a heated greased waffle iron. Close iron, cook about 4 minutes or until golden brown. Repeat with the remaining mixture.
I served it with breakfast sausages, tomato relish, sour cream and basil.
- Grate potatoes
- Mix ingredients
- Stir to combine
- Drop 1/4 cup of mixture onto waffle iron
I have successfully halved the recipe (using 2 eggs).
