Lemon, Honey & Ginger Syrup is perfect for soothing those winter sore throats and giving a boost to your immunity. It is quick and easy to make and a perfect gift for someone who’s not feeling well. Just add a couple of spoonfuls to a cup of hot water.
You will need:
a biggish piece of fresh ginger (about 100g)
1 cup honey
1 cup fresh lemon juice (6 medium lemons)
Slice the ginger thinly. Boil ginger with 1 cup water in a small heavy-based saucepan for about 5 minutes, stirring occasionally.
Remove from heat, then strain through a piece of muslin cloth (or clean kitchen multi cloth) into a jug.
Return ginger liquid to the saucepan. Add honey and lemon juice and simmer over a low heat until honey has dissolved.
Cool and pour into a sealable bottle and keep chilled.
It makes approx 600-700ml of syrup.
- Slice ginger thinly and boil in water

- Heat ginger liquid, lemon and honey
- Until honey dissolves
- Pour lemon honey ginger syrup into a bottle
- Add to hot water and enjoy

It would survive the sending part without spoiling but they would need to be able to keep it in the fridge when it got to them.
How long would this keep out of the fridge? and would it keep longer if I would add more sugar or sterilize the jars or leave it to thicken more?

I have certainly kept it in sterilised bottles out of the fridge for several weeks before opening without any trouble.
