Blueberry Banana Oat Muffins

Blueberry Banana Oat Muffins are the perfect on-the-go breakfast or an anytime snack. Blueberries, bananas, oats and eggs are stuffed full of health benefits so are perfect to include in your diet every day and these muffins make it possible for you to enjoy them any time.

Blueberry Banana Oat Muffins

Blueberry Banana Oat Muffin ingredients1 cup blueberries (fresh or frozen)
2 eggs
2 cup rolled oats
2 bananas, medium ripe
1 cup brown sugar*
1 tsp baking powder
1 tsp vanilla essence

Preheat oven to 200C.
Grease a muffin pan or line with baking cups.
Mix rolled oats, baking powder, and brown sugar together in a medium bowl.
Mash banana with a fork in a separate bowl, then beat in the egg and vanilla.
Add wet ingredients to the dry ingredients and mix well.
Then add the blueberries and fold gently into the mixture.
Spoon the muffin mix into the prepared muffin pan (I find this recipe usually makes 9-10 muffins).
Bake for 15 minutes.

* I regularly use much less sugar as the bananas and blueberries give the muffins enough sweetness.

Mix dry ingredients
Mashed banana, egg and vanilla
Combine wet and dry ingredients

Mix well
Gently fold in blueberries
Spoon into a muffin pan
