My macadamia tree
This Macadamia & White Chocolate Cookie Recipe is moist, chewy and truly delicious. I have a macadamia nut tree that has grown well since my previous post but not yet producing any nuts. My neighbours have a tree that does produce and drops some of its nuts on my side of the fence giving me a late winter treat. Usually I just gobble up my harvest but this year I decided to try making something with them that would last a little longer.

Macadamia & White Chocolate Cookie Recipe
1 1/2 cups flour
1/2 tsp baking soda
1/4 cup caster sugar
1/3 cup brown sugar
125g butter, melted
1/2 tsp vanilla extract
1 egg
180g white chocolate bits
3/4 cup roasted macadamias, coarsely chopped
Preheat oven to 200°C. Line oven tray with baking paper or a silicon sheet.
Sift flour, soda and sugars into large bowl. Stir in butter, extract and egg, then chocolate and nuts.
Put rounded tablespoons of mixture 5cm apart on tray.
Bake for about 10 minutes until golden. Leave to cool on tray.
- Prepare and roast macadamias
- Chopped macadamia nuts and white chocolate
- Sift dry ingredients
- Add wet ingredients
- Mix together
- Add nuts and chocolate
- Put into tablespoonfuls on a baking tray
- Bake until golden
- Enjoy!
