This year I finally have a big enough crop on my grapefruit tree that I can think about making things beyond the compulsory grapefruit marmalade and occasional fresh grapefruit for breakfast. This Grapefruit Slice Recipe is a nice alternative with a deliciously gooey and moist topping, that you can serve either as a slice or served with yoghurt as a dessert. It freezes well and you can pretty much eat it straight from the freezer so it is great to have on hand for when guests come round.

Grapefruit Slice
However the grapefruit flavour is quite delicate and I would have liked it to be a bit tangier, so I will try it with other citrus such as lemons, limes or oranges.
Base
150g unsalted butter, softened
1 cup flour
1/2 cup icing sugar

4 eggs
2 tsp finely grated grapefruit rind

1 1/3 cups caster sugar
2/3 cup freshly squeezed grapefruit juice

2/3 cup freshly squeezed grapefruit juice
Line the base and sides of a slice tin with baking paper.
In a food processor mix the butter, flour and icing until it forms a soft dough around the blade.
Press into the base of the slice tin and bake at 180°C for 20-25 minutes until lightly golden. Allow to cool slightly.
- Put base ingredients in food processor
- Process until sticks together
- Spread into a lined slice tin
- Bake until golden
Make the topping by whisking eggs, grapefruit rind, flour and sugar together until smooth. Add juice. Whisk to combine. It is still quite runny.
Pour over base and bake for 15 minutes or until just set.
Cool completely in tin then dust with icing sugar and slice.

Serve as a slice for morning tea or serve with yoghurt as a dessert.
