No matter how much I spread out my planting of broccoli, they all seem to come at once over the winter so it is good to have a range of tasty recipes ready to use them. These Asian Prawn & Broccoli Bites are great for nibbles for guests or a light meal, and they freeze well too. You can make them without the prawns for a vegetarian option.

1 head broccoli, cut into small pieces – you can use the stems as well as the florets
2 spring onions, chopped
12 large prawns, uncooked and peeled
2 eggs
zest of 1 lemon
1/2 cup panko crumbs
2 tsp soy sauce
2 tsp sesame oil
1 tsp freshly grated ginger
1 tbsp toasted sesame seeds
salt and pepper to taste
Preheat oven to 200C and line an oven tray with baking paper.
Drop broccoli into a large pot of boiling water and cook for 1 minute. Drain, then rinse in cold water and then drain again thoroughly – pat dry with a paper towel.
Put broccoli, spring onion and prawns into a food processor and process until finely chopped.
Add all the other ingredients and stir to combine.
Form into small egg shapes in your hands and place on baking tray.
Bake for about 15 minutes until firm and lightly browned.
Serve warm with Sweet Chilli Sauce or Asian-style Chilli Dipping Sauce.
- 12 large prawns
- Cut broccoli into pieces
- Cook 1 min in boiling water
- Put prawns, broccoli and spring onion in food processor
- Blitz till finely chopped
- Add remaining ingredients
- Stir till combined
- Form into shapes
- Bake until firm and golden
