My Lady Finger bananas are now producing well but this means that you have to do something with 100 or so bananas all ripening at once. I decided to try making Strawberry & Banana Jam. I regularly use Jam Setting Sugar that has pectin in it to make quick and easy fruit jams – you just need 1kg of whatever fruit or fruit combination you happen to have available.
500g hulled strawberries (I used frozen)
500g peeled bananas
1kg jam setting sugar
~10g knob of butter
Mash strawberries and bananas (or put them in a blender) and put them in a preserving pan. I roughly chopped the frozen strawberries and mashed them with a potato masher later once they had defrosted in the jam mix.
Add the sugar and heat gently, stirring continuously, until the sugar has dissolved. I left the fruit to macerate in the sugar for a while before heating.
Add a knob of butter. Then, still stirring, increase the heat and bring to the boil. Boil for 4 minutes only. Test to make sure setting point has reached by putting a small amount of jam on a cold saucer – if ready it will wrinkle when you push your finger through it.
Spoon into hot, sterilised jars and seal. Makes 3 x 500ml jars.

- Mash bananas
- Add sugar – leave to macerate
- Macerated fruit
- Heat gently to dissolve sugar
- Boil for 4 minutes
