I am a fan of classic strawberry jam but I may never look back after enjoying the layers of flavours in this amazing Orange & Strawberry Jam with Vanilla & Mint. Orange really brings out the fruity flavours of the strawberries and then the vanilla and mint lift it to a whole new level.
1kg strawberries (I used frozen)
4 oranges
2 lemons
2 vanilla pods
1kg jam setting sugar
A dozen or so mint leaves
Hull the strawberries, cut them in halves or quarters, and put them into a preserving pan.
Peel the skin thinly off the oranges using a potato peeler, being careful not to get any white pith. Finely slice the orange skin.
Zest the lemon. Juice the oranges and lemons.
Slice the vanilla pods down the middle and carefully scrape out the seeds using the tip of a knife.
Add the orange peel and lemon zest, juice, and vanilla pods and seeds to the preserving pan. Stir to combine and leave for an hour to macerate.

- Add to strawberries with juice
- Add sugar and leave to macerate
Heat slowly until the sugar has dissolved then increase the heat to achieve a rolling boil. Boil for about 10 minutes until setting point is reached (a small amount of jam on a cold saucer will gel and wrinkle when you push your fingernail through it).
Turn off the heat and lightly crush the strawberries using a potato masher. Finely slice the mint leaves and stir into the hot jam. Leave to cool for 5 minutes.
Ladle jam into hot sterilized jars and seal.
- Dissolve sugar
- Bring to rolling boil
- Boil about 10 minutes
- Add chopped mint leaves
- Stir and cool 5 mins before bottling
- Enjoy!
