With masses of citrus on my trees this year I have been searching for as many different recipes as I can from preserves to muffins, cakes and slices. This Orange Slice recipe is a bit too sweet for my liking but it is quick and easy, and keeps well in the freezer for taking as a plate or when guests come round. Cut it into small pieces so you can mix with other goodies on a plate.
1 cup desiccated coconut
250g Wine Biscuits
1 orange
1 lemon
100g butter
1/3 cup sweetened condensed milk
Crush biscuits in a food processor and combine with coconut and citrus zest from one lemon and one orange in a bowl. Make a well in the centre.
Melt butter and condensed milk together in the microwave. Pour hot melted mixture into the well and stir to combine.
Press mixture into a 17 x 27cm slice tin lined with nonstick baking paper with an overhang on all sides. Refrigerate for 30 minutes to set.
- Put wine biscuits in food processor
- Process to a fine crumb
- Add coconut & grate in rind
- Add melted butter and condensed milk
- Mix together
- Press into slice tin
1 cup icing sugar
1 orange
To make icing, beat softened butter, sifted icing sugar and juice of one orange together until pale and fluffy. Add the juice gradually until you get a thick icing. If you add all the juice as I did, it will be much too runny and you will need to add a lot more icing sugar to get the desired consistency. Keep any remainder in the freezer for another citrus recipe.
Spread base with icing and decorate with orange zest. Cut into squares, triangles or bars. Best stored in the fridge.
