Triple Ginger Loaf

Triple Ginger Loaf

I just love the taste of ginger! Double ginger is even better. This Triple Ginger Loaf recipe is an absolute favourite – it uses fresh ginger, ground ginger and crystallised ginger, and looks absolutely amazing to bring out for visitors.
1 cup golden syrup
½ cup water
75g butter
½ cup packed brown sugar
2 tbsp grated fresh ginger
½ tsp sea salt
2 eggs
2 cups flour
1 tsp baking soda
2 tbsp ground ginger
1 tsp ground mixed spice
Icing
60g butter
½ cup brown sugar
½ tsp ground ginger
2 tbsp milk
½ tsp sea salt
¾ cup icing sugar
2 tbsp chopped crystallised ginger
Put the golden syrup, water, butter, brown sugar, fresh ginger and salt in a saucepan. Stir over a medium heat until the butter has melted.
Cool for about 10 minutes then whisk in the eggs.
Mix flour, baking soda and spices together in a large bowl. Add the liquid mixture and whisk until smooth.
Pour into a greased loaf tin and bake for about 30-40 minutes at 180C or until the top springs back when pressed lightly with a fingertip.
Leave to cool completely before removing from the tin.

Stir until smooth

Icing: Heat the butter, brown sugar, ginger, milk and salt in a small saucepan until the sugar has dissolved.
Bring to the boil then simmer for 2 minutes, stirring constantly.
Take off the heat and stir in the icing sugar to make a smooth icing.
Cool for a few minutes (not too long) and then spread the icing over the loaf. Mine was a bit too thick but it tastes amazing.
Sprinkle chopped ginger over the top and decorate with edible flowers for a spectacular effect.
