Orange & Cinnamon Muffins

I love the quick simplicity of these orange & cinnamon muffins – you just put a whole orange into a food processor and then add the other ingredients. Quick and easy to make with oranges fresh from the garden or make in advance and keep in the freezer.

Orange & Cinnamon Muffins

1 orange (or 2 if you like it really orangey)
1 egg
25g melted butter
1/2 cup sugar
1 1/2 cups flour
1 1/2 tsp baking powder
1 tsp cinnamon
1/4 cup milk

Topping
1 tsp cinnamon
2 tbsp sugar

Remove any pips from the orange(s) and then place into a food processor. Blitz until well chopped.
Add egg, melted butter and sugar, then process until well mixed.
Add flour, baking powder, cinnamon and milk. Pulse until just mixed.
Spoon the mixture into greased or lined muffin tins. (The quantity is quite small so I just filled 8 of the muffin wells to get bigger muffins).
Combine the cinnamon and sugar for the topping and sprinkle on the top of the muffins.
Bake at 180C for 20 minutes.
Cool a bit and then remove to a cooling rack.
