
Banana Passionfruit Oat Muffins
Banana Passionfruit Oat Muffins are a variation on my favourite Blueberry Banana Oat Muffin recipe. My Lady Finger Banana trees are really enjoying the extra heat this summer and producing large bunches of bananas. I happened to have some passionfruit ripe at the same time and thought banana, passionfruit and coconut would be a great combination. I like the recipe using oats as it seems to be a healthier option than more ‘cake-like’ muffins, and means that I am happy to have them for a breakfast on-the-go.

Lady Finger bananas
2 bananas or equivalent Lady Finger bananas
3 tbsp passionfruit pulp (can use preserved syrup)
1/2 cup coconut threads
2 eggs
2 cup rolled oats
1/2 cup brown sugar (omit if using passionfruit syrup)
1 tsp baking powder
Preheat oven to 200C.
Grease a muffin pan or line with baking cups.
Mix rolled oats, baking powder, and brown sugar together in a medium bowl.
Mash banana with a fork in a separate bowl, then beat in the egg and vanilla.
Add wet ingredients to the dry ingredients and mix well.
Then add the blueberries and fold gently into the mixture.
Spoon the muffin mix into the prepared muffin pan (this recipe made 8 large muffins).
Bake for 20 minutes until golden.

- Put banana mix into bowl with dry ingredients
- Mix together
- Spoon into muffin tray
