Lockdown Toasted Muesli Recipe

I’m calling this my Lockdown Toasted Muesli recipe because it is what I ended up making a lot of when I had to purchase bulk supplies of baking ingredients. During Level 4 Lockdown you couldn’t get supermarket ‘click and collect’ or home delivery unless you waited up until midnight when the next slots (for a week out) were released. Many companies were arranging delivery of food boxes but I have plenty of fruit and vegetables in my garden so that wasn’t what I needed. I was delighted to discover that Service Foods (who normally supply to restaurants) were adapting their offerings to enable home deliveries – and you could select what you needed. They had a reasonable selection of items right from the start but these were initially in catering-size packs.
So having ordered bulk supplies of many baking ingredients (I still don’t know what I’m going to do with 1kg of baking powder!) I thought these would be perfect for making my own muesli – and I like it so much I have made it several times more. You can of course swap out some or all of the coconut and almonds for other seeds and nuts of your choice. And similarly replace the apricots and cranberries for any dried fruit you prefer. I like this recipe because it is not too sweet, and is crispy and not too hard-going to eat.

Lockdown Toasted Muesli

3 cups rolled oats
3/4 cup dessiccated coconut
3/4 cup flaked almonds
1/2 cup chopped dried apricots
1/2 cup dried cranberries

1/4 cup honey
1/4 cup brown sugar
1/4 cup olive oil
Combine oats, coconut, almonds, apricots and cranberries in a large bowl. Mix together.
Combine honey, sugar and oil in a saucepan over medium heat. Cook, stirring often, for 5 minutes or until sugar dissolves.
Pour warm honey mixture over oat mixture. Mix well to combine.
Line a large, deep baking dish with baking paper. Spread mixture evenly over base of dish.
Bake for 25 to 30 minutes at 150°C, stirring every 10 minutes, or until golden and toasted. It doesn’t go brown but does go crispy.
Set aside to cool completely (muesli will form crisp clusters on cooling). Crumble into an airtight container.
