Chinese Cucumber Salad Recipe

In my previous post I shared my Chinese Eggplant with Spicy Garlic Sauce recipe. This time I share my version of a recipe for the Chinese Cucumber Salad that I enjoy especially with home-made dumplings. It is very easy and a delicious way to enjoy the summer glut of cucumbers.

Dumplings and Chinese Cucumber Salad

1 largish cucumber (peel if it has tough skin)

1 clove garlic, crushed and minced

1 tbsp rice vinegar

1 tbsp soy sauce

1 tbsp sweet chilli sauce

1/2 tsp salt

1/2 tsp sesame oil

The main aim of preparing the cucumber is to get as much surface area as possible for the sauce to stick to. You can use a cleaver or a meat pounder to crush it, then cut it into bite-size pieces. I cut mine in half and then used a knife to make random cuts all over it before cutting in into pieces.

Combine the garlic, vinegar, soy sauce, sweet chilli sauce, salt and sesame oil in a small bowl and mix well.

Right before serving, pour the sauce mixture over the cucumber and mix well. Don’t add the sauce beforehand as it will absorb water out of the cucumber and dilute the sauce.
