Lime Honey & Ginger Gummies Recipe

Over the winter I like using my citrus along with ginger and honey to make ‘health tonics’ like lemon, honey & ginger syrup or orange, ginger & turmeric winter tonic. This year I saw a recipe for Lime, Honey & Ginger Gummies that sounded interesting and thought it would be a different way to boost my health over the winter. The use of the word gummies made me think that they would be a lot firmer than they actually are (more like cubes of slightly thick jelly) but they are very tasty. You could make them with whatever citrus you happen to have.

1tbsp powdered gelatin
1/4 cup hot water
1/2 cup lime juice
3 tbsp honey
1/2 tsp ground ginger
pinch of salt

Combine gelatin with hot water in a small jug.

Pour lime juice into a saucepan, add honey, ginger and salt. Warm gently until the honey is dissolved, then add to gelatin mixture. Stir until dissolved, then pour into a lightly greased small loaf pan (or into shaped moulds if you prefer).

Chill for 2 hours in fridge to set. Remove from mould and cut into squares. Store in a container in the fridge and consume within about 5 days.
