When life gives you lemons (and you’ve made more than enough lemonade) try making lemon brownie. I know, lemon isn’t brown but the texture of this cake is the same as a traditional chocolate brownie – and it is delicious so give it a go.
Lemon Brownie Recipe
1 ½ cups flour
1 ½ cups sugar
250g butter
4 eggs
2 tablespoons lemon rind
¼ cup lemon juice
Cream butter and half of the sugar together in a food processor. Add flour and mix until well combined.
In a separate bowl whisk eggs, lemon juice, lemon rind and the remaining sugar together.
Pour the egg mixture into the flour mixture and beat until smooth.
Pour the mixture into a greased sandwich tray.
Bake for 30-35 minutes at 180C or until golden and just firm to touch.
Allow to cool before removing from tin.
Dust with icing sugar before serving.

- Combine wet and dry ingredients
- Mix until smooth and creamy
- Pour into greased sandwich tray and bake
- Dust with icing sugar when cool
