Having started to make my own alcohol (see Making Alcohol: 3 Ways) and with a freezer full of my summer berries, I decided that it would be fun to try making some different fruit liqueurs. This one is Raspberry Liqueur. You can swap out the fruit in the recipe for whatever you have on hand (or perhaps even make a mix).
700g fresh or frozen raspberries*
1L vodka or neutral spirit
1 cup sugar
*freezing breaks down the cell walls, allowing you to get more juice
Pour raspberries, vodka and sugar into a large jar with a lid.
Shake until the sugar has dissolved.
Store in a cool, dark place for 4 weeks or more.
Shake daily for the first week and every couple of days following.
Line a sieve with cheesecloth and place it over a large jug or bowl. Pour raspberry liqueur slowly into the sieve allowing the liquid to drain through.
Pour your liqueur into a clean bottle and then leave to age for at least a month.
