This Pesto recipe moves even further away from the traditional basil pesto than the other pesto recipes I’ve previously shared (Lemon Balm & Walnut Pesto, Dandelion Pesto), using spinach, coriander, walnuts, but no Parmesan cheese. Avocado gives it a lovely creamy texture that makes it wonderful as a dip or to serve alongside corn fritters. You could also think of this as an alternative guacamole recipe. Which ever way you think of it, this recipe is a delicious way to increase the different plants you include in your diet.
1/2 cup coriander leaves
1/2 cup spinach leaves
1/2 cup walnuts
1-2 garlic cloves (or use garlic infused olive oil)
2 tbsp fresh lemon juice
1 tbsp apple cider vinegar
1 tbsp olive oil
1 ripe avocado
Large pinch of salt
Put all the ingredients into a food processor and blend until broken down and thoroughly mixed.
Serve generously with your favourite crackers and crudités, or alongside pretty much anything you like.
