You may not thank me for sharing this recipe with you as it is exceedingly moreish and, as I’ve discovered, tastes even better straight from the freezer. The dark chocolate and orange are a match made in heaven – and when combined with healthy oats, it has to be good for you – right?
1/2 cup melted butter (100g)
1/2 cup brown sugar
1 egg
1 tsp vanilla paste (or essence)
1/2 tsp baking soda
pinch salt
1/2 cup dark chocolate (chips or chopped)
zest of 1 orange
1 1/4 cups whole grain oats
90g Gluten Free Flour
Whisk first 6 ingredients together,
Mix in the remaining ingredients.
Roll tablespoons of the mixture into balls and place on baking tray. Use fork to flatten the balls (dipping fork in water in between helps to stop it sticking).
Bake at 180C for 15-20 minutes.
Take out of oven and use a spatula to separate the biscuits if they have spread and joined together. Once cooled enough to move, remove biscuits to a wire rack to cool.
The biscuits will cool to be crispy on the outside and chewy in the middle.
- Mix first 6 ingredients together
- Chopped dark chocolate and orange zest
- Mix oats and GF flour
- Add all ingredients to wet mixture
- Mix well
- Place in spoonfuls on a tray and flatten
- Bake at 180C for 15-20 mins
- Cool and enjoy
