Having a beehive in my garden got me thinking about what I could do with the honey and, having experimented a bit with making my own wine, I had been contemplating making honey mead. On a recent trip to Adelaide I was fortunate enough to visit the McLaren Vale wine region and try some excellent honey mead from Maxwell Wines, and was inspired to give it a go. Mead is made by fermenting honey and is believed to be the oldest fermented beverage known to humans. The ancient Greeks knew it as … [Read more...]
Orange Jam Recipe
My navel orange tree, although still relatively small, produced a good crop this year so I decided to make some orange jam. I've previously made Whisky Orange Marmalade and Cointreau Orange Marmalade but wanted to try making a jam that had a sweeter orange flavour for a change rather than the tartness of marmalade. 6 oranges Water ( to make up 1.5 litres with the orange juice) Sugar (1 cup per cup of orange pulp) Wash and zest the oranges. I used a potato peeler but you could use a … [Read more...]
Fresh & Zingy Lime Marmalade Recipe
I have previously shared my Brandied Lime Marmalade recipe and my earlier not so successful attempts. Each year I get lots of limes on my tree so I've been hoping to find a recipe that would give me a fresh and zingy lime marmalade that wasn't too sweet but also not too tart and bitter. Success! I am really enjoying the results of this recipe. This month's NZ Gardener magazine had a feature on marmalade - trying to increase its popularity. Apparently the younger generations have not been … [Read more...]
Lime Pickle
My lime tree produces copious amounts of limes and when my friend Michele gave me a jar of lime pickle that you could add to coconut cream to make a simple chicken curry, I knew I'd found a winner - this is that recipe. Each year I make masses of lime cordial for friends and family but am always on the lookout for something to make with them beyond adding them a few at a time in lots of different recipes. 24 limes 1/2 cup sea salt 1/2 cup canola oil 1 onion, finely chopped 8 cloves … [Read more...]
Raspberry & Rosewater Jam
Raspberry & Rosewater Jam has a wonderful subtle floral flavour that adds a whole new dimension to traditional raspberry jam. Raspberry jam was already one of my favourites but the addition of rosewater takes it to a whole new level. Perfect with scones and cream, in a jam sponge, or even put a spoonful in some Greek yoghurt. 1kg raspberries (I used frozen) 1kg jam-setting sugar 2 tbsp lemon juice 2 tbsp rosewater Heat frozen raspberries gently until they thaw and start to soften. … [Read more...]
Apple Pie Jam (Spiced Apple Jam)
This apple pie jam aka spiced apple jam recipe is a wonderful way to use windfall apples (or in my case the ones the birds have pecked). I have usually just stewed my apples and frozen them but this recipe allows you to quickly enjoy the deliciousness of spiced apples on your toast or on scones with some cream. You can use it as filling for some quick mini apple tarts or spread it on crepes and serve with yoghurt or ice cream to make a tasty dessert. Recipe can easily be halved if you only have … [Read more...]
Feijoa & Apple Cordial Recipe
With food wastage coming to the fore, there is an increasing focus on using as much of our fruits and vegetables as possible so I decided to try making a cordial using feijoa skins. I kept unblemished feijoa skins where I had scooped out the flesh to eat, and just put them in a bag in the freezer until I had a big bag full. I also used some windfall apples to complete the focus. Usually I don't worry too much about using every part of my produce because more often than not I have a glut and … [Read more...]
Feijoa & Ginger Jam Recipe
This Feijoa & Ginger Jam Recipe is a great way to make use of any "buggy fruit" from your crop. Simply cut out the brown bits and create a delicious treat. Last year sadly I had guava moth infest my feijoa trees for the first time so I'm having to learn to live with having "buggy fruit" until I figure out how to thwart the invading caterpillars. I made my first batch of this feijoa & ginger jam using "buggy fruit" but I forgot to take any pictures whilst making it. My friend Debbie … [Read more...]
Cherry Compote Recipe
I just love cherries!! and anyway I can find to extend the season of enjoyment is good with me. This time I share a Cherry Compote Recipe. Compotes are fresh or dried fruits cooked slowly in a sugar syrup to retain their shape. Compotes frequently contain wine or liqueur: I've seen them cooked with red wine or with kirsch. This recipe contains brandy but the alcohol is boiled away just leaving the flavour behind. 1kg pitted cherries (approx 1.25kg to start with) 500g jam sugar (that has … [Read more...]
Making Apple Wine
Making Apple Wine wasn't as successful as my other efforts making feijoa wine and wine from white eating grapes. It has eventually turned out to be drinkable but a lot of hassle and heartache to get there and still not as I would have liked. I will share my experiences because there are lots of learnings for other budding wine makers. My previous efforts at making wine have been based on the generic recipe and instructions for making fruit wine on the very helpful makewine.co.nz website. And … [Read more...]
