This is a simple, delicious and versatile soup. Instead of serving it in your usual soup dish, try serving it in glasses. If you are having a party, you could serve it in shot glasses along with a range of other nibbles. 4 large potatoes, peeled and chopped 2 cups water 1 tsp chicken stock powder 2 tbsp Thai fish sauce Peeled rind of 1/2 lemon or lime 2 tsp minced coriander 1 cup coconut cream 1/4 cup lemon/lime juice Simmer the potatoes, water, stock powder, fish … [Read more...]
Ginger Strawberry Cheesecake
It just had to be something with strawberries for a Christmas Day dessert - particularly when I had my own strawberries ripe and bursting with flavour. I wanted to try something a bit different and found a recipe for a cheesecake with a 'gingernut' base and fresh macerated strawberries on top. It was very easy and not too sweet. 250g (1 packet) Gingernut biscuits 75g butter, melted 250g cream cheese 1 cup sour cream 1 tsp vanilla extract 2 tbsp finely chopped crystallised … [Read more...]
Making Feta Cheese
In an earlier post I described the cheese making kit I had got from Mad Millie. My second foray into cheese making was a feta cheese. Feta is great crumbled over salads or dishes like risotto. This is also an easy cheese to make but is a completely different process from the ricotta I tried first. The milk is heated to 37C before a starter culture is added with rennet and calcium chloride and then left to set in a water bath. The curds are cut and gently stirred before scooping them into … [Read more...]
Making Fruit Leathers
I have always been a big fan of Annie's Fruit Leathers as a snack and part of my motivation in buying a Dehydrator was so that I could make my own fruit leathers from all the fruit I will one day have growing in my garden. I was given a bag of apples and had some blackberries in the freezer so thought I'd try out the method. My dehydrator came supplied with one fruit leather tray and I purchased another set of 3 - I had to ask for these to be ordered in for me. Recipe Peel apples and … [Read more...]
Lemon Gelato and Blueberry Buttermilk Sherbet
After my previous success with Rose & Raspberry Sorbet, I wanted to try my hand at gelato and sherbet to see what the difference was between them all. I had some buttermilk (whey) left over from my cheese-making, so chose Blueberry Buttermilk Sherbet - another Martha Stewart recipe; and Lemon Gelato from the Ice cream Maker Recipe book. The sherbet is slightly creamier than the sorbet and the gelato is creamier again. There are two types of gelato: the sugar syrup gelato that I made has … [Read more...]

Put feijoa pieces into a small saucepan with the ginger, golden syrup and the first amount of butter, simmer for 10 minutes over a low heat stirring … [Read more...]
Homemade Rose & Raspberry Sorbet
I had been thinking for a while that making fruit sorbets would be a great use of fruit from my garden so when I found a Sunbeam Ice Cream Maker on super special it seemed like a sensible move to buy it and try it out. The recipe book is full of different recipes to try out: basic vanilla icecream and lots of variations, gelatos and sorbets. I also found 25 deliciously different recipes to try on Martha Stewart's website. A traditional creamy Ice Cream is made from a custard base using … [Read more...]
Whey Crepes with Homemade Ricotta and Seasonal Fruit
I described my first attempt at cheese making in an earlier post. I made a deliciously simple whole milk ricotta cheese and had the benefit of some nutritious whey as well. I was keen to find a recipe that would use both of these, so was delighted when I discovered a recipe for whey crepes served with ricotta cheese and fruit - perfect for a weekend breakfast. Recipe 3 eggs 1 cup flour 2 tbsp melted butter 1 1/2 cups whey 1 tbsp sugar Break eggs into a food processor. … [Read more...]
Cheese Making At Home: Ricotta
Cheese making has always intrigued me as one of those mythical arts that I never thought I'd be able to make. I'm not a fan of strong cheeses and for some reason I had always associated cheese making with those sorts of cheeses. It wasn't until I saw the cheese making kits at Mad Millie that I started to think about more about trying it. I started looking at the videos and lists of different cheeses that you could make quite simply. These were all the sorts of 'cheeses' that I do eat quite … [Read more...]
Make Your Own Gourmet Yoghurt Dessert
Most people in New Zealand (and likely everywhere else now) will have heard of EasiYo. If you don't have one of their yoghurt makers, you really should! I used to buy pottles of fruit yoghurt and have them every day until I realised how full of sugar they are and how expensive they were getting. I tried making home made yoghurt using plain yoghurt as a starter culture but it seemed that you had to keep it going and I always ended up with far more than I could use, particularly if I was away for … [Read more...]
