My fig trees produced their first fruit this year – I was so excited. First of all I was just eating them fresh off the tree, savouring the novelty of fresh figs. Grapefruit Marmalade
Grapefruit Marmalade is my favourite - just the right blend of bitterness combined with a caramelly sweetness. I find many of the store bought varieties just too sweet. Fruit Crumble
Fruit crumbles are one of the most versatile winter desserts and a great way to use fruit - whether it be fresh, frozen, bottled or canned. This is my all-time favourite recipe that is so simple, easy to vary and even got a 'you should be on MasterChef' thumbs up from my nephews. Lemon Curd
One of my favourite lemon recipes is lemon curd – I’ve been waiting (not so) patiently for my lemons to ripen and, as you can see in the photo, I couldn’t wait for all the green to be gone from the fruit before I made my first batch. Limoncello (Grown-Ups’ Cordial)
Zest of 6 Lemons 250ml fresh lemon juice 1 litre vodka 600ml vodka syrup* Wash the lemons. Use a zester to peel the skin. Juice the lemons and put the juice and zest into a large jar with the vodka. Store in a dark, dry place for about 2 weeks to let the flavour absorb into the vodka. Strain the vodka mixture through wet muslin or cheesecloth. Add the vodka syrup. Store in bottles ready for use. This home-made cordial can be made with equal quantities of lemon and lime, all lemon, all lime, or any combination of citrus that you might have. It makes about 1.25 litres.
