Sweet Baby Leek Carbonara Recipe

December 7, 2021 By sue Leave a Comment

Sweet Baby Leek Carbonara

This recipe for Sweet Baby Leek Carbonara is inspired by Jamie Oliver. Although his recipe called for 2 large leeks,  I had skinny leeks in the garden that hadn't managed to fatten up enough by the time I wanted to prepared the veggie garden to plant new things. So I decided to call them Sweet Baby Leeks (as though it was intentional to use them when they were small) and made them the hero of the dish! 1 big handful baby leeks (or 2 large leeks) 4 cloves garlic 4 sprigs fresh … [Read more...]

Marinated Minted Mushrooms Recipe

November 23, 2021 By sue Leave a Comment

Stir through chopped mint just before serving

In a previous post I shared my experiences of growing button mushrooms at home from a kit. So it is a good follow on to tell you about what I did with the mushrooms I had grown myself. Of course there are the obvious mushrooms on toast, mushroom omelettes and mixed into stir fries, but this extremely simple recipe has to be one of my favourite recipes for button mushrooms: Marinated Minted Mushrooms. The joy of watching tiny mushrooms forming: Marinated Minted Mushrooms Combine 300g … [Read more...]

Growing Ginger at home

September 7, 2021 By sue Leave a Comment

Ginger roots during growing season

I absolutely LOVE ginger and go through large quantities in my cooking - savoury, sweet and even drinks. For some reason I had always just assumed that it was one of those exotic spices that you had to import without even contemplating that I could grow ginger at home myself. Then I saw some at the local garden centre and knew that I had to give it a go. Ginger (Zingiber officinale) is a tropical plant but it can be grown in a greenhouse or indoors and outdoors in warm spots outdoors from … [Read more...]

Serve sprinkled with parsley

Butternut Pumpkins (also known as Butternut Squash) are a reliable crop in my garden, so I'm always on the lookout for different recipes to use them in. There are lots of Pumpkin Alfredo Pasta Sauce recipes online so I thought it would be a good thing to try. Alfredo Sauce is a rich, creamy Italian pasta sauce made from butter, cream, garlic and parmesan and usually served with fettucine pasta. Using pureed pumpkin and adding spinach and parsley is a great way to make it a bit … [Read more...]

Walnut & Banana Bread Recipe

Banana Bread Recipe (with Walnuts)

I have previously shared my versatile banana cake recipe and a banana & walnut loaf recipe. I always seem to have masses of bananas in my freezer now that I am successfully growing bananas at home and had always heard people talk about banana bread but I was never quite sure whether it was just banana loaf or something different - so I investigated ... There seems to be a lot of confusion about what the difference actually is between banana cake, banana loaf and banana bread. A … [Read more...]

Coconut Loaf Recipe

August 6, 2021 By sue Leave a Comment

Serve with a spread of butter

During lockdown last year when it was impossible to get a supermarket delivery or even a 'Click & Collect', I found a food service company who quickly pivoted to do home deliveries with the items that they usually supplied to restaurants. I was so grateful that I didn't really mind that I had to get everything in very large quantities. I distributed the 1kg of baking powder amongst friends and family as there was no way I was going to be able to do that amount of baking before its expiry … [Read more...]
