Blackberry & Lavender Jam Recipe

Blackberry & Lavender Jam

I love finding an extra twist for my favourite jam recipes and this Blackberry & Lavender Jam doesn't disappoint. There is a secret ingredient that gives it an extra lift as well. 1 kg Blackberries (I used frozen) Juice and zest of a large lemon 1 tbsp lavender (I used lavender sold for tea) 1 kg Jam Setting Sugar A knob of butter (about 10g) 1 tbsp orange blossom water Heat the blackberries, lemon and lavender in a preserving pan, crushing the fruit coarsely with a … [Read more...]

Blackberry Jelly Recipe

Blackberry Jelly

Blackberry jam has always been one of my favourite recipes and I wanted to find out what the difference was between blackberry jam and blackberry jelly. After trying this blackberry jelly recipe, it appears that the difference is primarily the absence of seeds in the jelly. I don't think it is worth the extra step unless the seeds bother you. Usually jellies are a clear bright colour but this blackberry jelly is so dark that you can't see light through it. Some recipes mix blackberry and apple … [Read more...]

Blackberry & Apple Crumble Recipe

Blackberry & Apple Crumble

Autumn is a great time for fruit and if you are fortunate enough to have blackberries growing in your garden (I have a thornless one) or somewhere you can go and pick them wild then there are lots of delicious things you can make with them. One of my favourites is Blackberry & Apple Crumble. I made this with windfall apples. Fruit Fill a deep oven-proof dish half to two thirds full with fruit. I used 3 green apples, sliced, and a big handful of blackberries. I don’t add any … [Read more...]

Quick & Easy Blackberry Jam Recipe

Ladle into jars

I'm so pleased to have blackberries in quantity again now. My thornless blackberry plants have finally recovered after I had to take them out whilst replacing the ponga fence they were growing against. They sulked for a few years after replanting but have produced a very good haul this season and they seem to have fruited much earlier than I remember from previous years. This is a very simple Blackberry Jam Recipe that can be made in no time at all and is perfect on hot buttered scones. You can … [Read more...]

Blackberry, Apple & Pinot Noir Jam

Blackberry Apple & Pinot Noir Jam

This Blackberry, Apple & Pinot Noir Jam has the great pairing of blackberry and apple, lifted by the addition of pinot noir. After making Apple Pie Jam I was in the mood for another jam to make using apples and thought 'what about blackberry and apple? Perfect in a dessert, why not in a jam?' I'd also made Raspberry & Rosewater Jam, where the addition of the rose water gave a subtle lift to the fruity flavour of the raspberries, so why not try a splash of wine to lift the blackberry and … [Read more...]

Making Fruit Leathers

December 16, 2014 By sue Leave a Comment

I have always been a big fan of Annie's Fruit Leathers as a snack and part of my motivation in buying a Dehydrator was so that I could make my own fruit leathers from all the fruit I will one day have growing in my garden.  I was given a bag of apples and had some blackberries in the freezer so thought I'd try out the method. My dehydrator came supplied with one fruit leather tray and I purchased another set of 3 - I had to ask for these to be ordered in for me. Recipe Peel apples and … [Read more...]
