Potato, Fennel & Cauliflower Bake

Spread layers of ingredients into an oven dish

This potato, fennel & cauliflower bake was a bit of an experiment that turned out to be a winner. I harvested a lovely big fennel bulb from my winter vegetable garden (along with a head of cauliflower that wasn't going to win any beauty contest) and wondered what to do with it. Broccoli is a Superfood.  It is one of the most widely researched members of the brassica family (broccoli, cabbage, cauliflower, Brussels sprouts) and is renowned for its health giving properties. Broccoli is known to have a protective effect against cancer. It also contains a wide range of phytochemicals which protect against many chronic diseases. Broccoli and Cauliflower Soup
