I have a freezer full of cauliflower because they always seem to come at once in the garden no matter how I space out the planting times. But this is a good thing because there is always a good supply when I am inspired to make something using them. They are so versatile and can be used as the feature of a meat-free meal. This recipe comes from Jamie Oliver, although I've made a few changes based on the ingredients I had available. You can of course roast and skin your own capsicums/red peppers … [Read more...]

I left it for a couple of weeks, intending to pull it out when I got stuck into some gardening. Imagine my surprise when I was greeted with this monster. That is an awful lot of cauliflower! I filled a roasting pan with cauliflower florets … [Read more...]

This potato, fennel & cauliflower bake was a bit of an experiment that turned out to be a winner. I harvested a lovely big fennel bulb from my winter vegetable garden (along with a head of cauliflower that wasn't going to win any beauty contest) and wondered what to do with it. I'd heard that you could use fennel with potatoes in a 'gratin' (cheese sauce) dish, so decided to put all the ingredients in, along with some bacon, to make an all in one dish comfort food dish. 3 potatoes 1 … [Read more...]
