This buttermilk scone recipe brings together my gluten free (GF)and lactose free (LF) journeys. I’ve previously posted on making cultured butter with LF cream and yoghurt. Making LF cultured butter of course produces LF cultured buttermilk that is perfect for using to make these delicious scones. Enjoy them with jam of your choice and a cup of tea. 270g gluten free flour blend (*see below) 35g ground almonds 2 tsp xanthan gum 3 tsp baking powder 1/2 tsp baking soda 80g cold … [Read more...]
Gluten Free Oat Biscuits with Dark Chocolate & Orange
You may not thank me for sharing this recipe with you as it is exceedingly moreish and, as I’ve discovered, tastes even better straight from the freezer. The dark chocolate and orange are a match made in heaven - and when combined with healthy oats, it has to be good for you - right? 1/2 cup melted butter (100g) 1/2 cup brown sugar 1 egg 1 tsp vanilla paste (or essence) 1/2 tsp baking soda pinch salt 1/2 cup dark chocolate (chips or chopped) zest of 1 orange 1 1/4 cups whole grain … [Read more...]
Gluten-Free Walnut Muffins
Now that I have decided to go ‘gluten free’, I need to find new baking recipes. The original recipe for this was a very fancy Yotam Ottolenghi dessert cake, that I adapted to be muffins. They are delicious plain or you can turn them into individual dessert cakes. 4 large eggs, yolks and whites separated 200g raw sugar 350g walnut halves, whizzed in a food processor to the consistency of fine breadcrumbs Finely grated zest of 1 lemon 1/4 tsp sea salt 12 Walnut Halves … [Read more...]
Gluten-free Apple Walnut Muffins
I am finding all sorts of gluten free recipes that are simple and delicious and can replace many of my favourite baking items (if I can’t convert them). The original recipe used all ground almonds but my gut can’t cope with that amount at once so I have substituted gluten free all-purpose flour for half of the almonds. These nutty, fruity, spicy muffins are delicious for a quick treat or even dessert. They freeze well so you can always have some on hand for when you want them. 120g … [Read more...]
Gluten Free Flatbread recipe
I have been sharing some of my favourite bread recipes using gluten free (GF) sourdough but sometimes you just want to make something quickly without having to wait for the sourdough to ‘do its thing’. I was always a fan of Jamie Oliver’s Easy Flatbreads made with flour, baking powder and yogurt, so I decided to try it with a GF Flour mix. I have this GF Flour Mix made up for my other cooking and baking instead of wheat flour: 300g brown rice flour 220g buckwheat flour 120g tapioca … [Read more...]
Gluten Free Feijoa Date & Ginger Loaf Recipe
Earlier I posted praising gluten free sourdough for its simplicity and versatility. Sourdough helps with strong binding for recipes like bread, pizza dough, and crackers. You can make an All-purpose GF Flour Mix that can be used for other cooking and baking, but it often needs a bit of tweaking to get recipes to work as they can be a bit dry and crumbly. I am working my way through some of my favourite recipes and updating them to be gluten free. All-purpose GF Flour Mix 300g brown rice … [Read more...]
Gluten Free Seed Crackers using Sourdough Discard
If you are not baking bread every week, you still need to feed your gluten free (GF) sourdough starter, and there will be some left over that you need to discard. This ‘discard’ can be kept in the fridge for up to a couple of weeks and used to make these delicious healthy seed crackers. They are so simple and a great way to get a range of different seeds into your diet. I generally don’t have a lot of discard but I often have around 3-4 tbsp which is a perfect amount to make a few seed crackers … [Read more...]
Gluten Free Focaccia Recipe

It is perfect for serving with soup, with dips, or with anything really. Evening before: Activate Sourdough Starter 60g GF sourdough starter 95g brown rice flour 95g filtered water Mix all together in a large glass jar until smooth. Gluten Free Sourdough Spicy Fruit Loaf Recipe
I’ve previously shared my journey to gluten free (GF) sourdough and my favourite ‘daily bread’ sandwich loaf recipe. This time I’m sharing my GF sourdough spicy fruit loaf recipe - perfect for when you just need something a little sweet. This recipe is a variation of my daily sandwich bread, and you can make whatever variations you like with different dried fruit, spices, nuts; more or less honey etc. Evening before: Activate Sourdough Starter 60g GF sourdough starter 95g brown rice … [Read more...]
Gluten Free Sourdough Sandwich Bread Recipe
In an earlier post I talked about my health journey and how that led to me going ‘gluten free’. I also described my experiences with sourdough and how gluten free (GF) sourdough is now a regular part of my life. I don’t like the very hard crust of ‘standard’ sourdough loaves so this is my favourite go-to recipe for my ‘daily bread’ - quite dense but still soft. Evening before: Activate Sourdough Starter 60g GF sourdough starter 95g brown rice flour 95g filtered water Mix all together … [Read more...]
