I got a big box of kumara from a colleague at work who's husband is a kumara farmer, and was delighted to find a recipe for Kumara Rosti - basically healthy hashbrowns! You can make a batch and freeze them so that you can make a quick healthy breakfast with an egg on top. My harvest of kumara this year wasn't very spectacular but this recipe for Kumara, Ham & Pesto Muffins with Walnuts & Sun-dried Tomatoes is certainly a winner. Growing kumara in containers is a great option if you have limited space in your garden. I had never grown kumara (sweet potato) in my garden before because they spread and use up too much valuable space but when I saw a bunch of kumara slips or shoots for sale in the garden centre, I couldn't resist giving it a go and thought I'd try growing them in containers. These delicious roasted vegetables can be served as a meal by themselves.
