Serve Kumara Rosti with Eggs

I got a big box of kumara from a colleague at work who's husband is a kumara farmer, and was delighted to find a recipe for Kumara Rosti - basically healthy hashbrowns! You can make a batch and freeze them so that you can make a quick healthy breakfast with an egg on top. My harvest of kumara this year wasn't very spectacular but this recipe for Kumara, Ham & Pesto Muffins with Walnuts & Sun-dried Tomatoes is certainly a winner. They are absolutely delicious with layers of flavours and textures. These kumara & zucchini pancakes are a delicious quick lunch and a great alternative to my favourite brunch staple, corn fritters. Growing kumara in containers

Growing kumara in containers is a great option if you have limited space in your garden. I had never grown kumara (sweet potato) in my garden before because they spread and use up too much valuable space but when I saw a bunch of kumara slips or shoots for sale in the garden centre, I couldn't resist giving it a go and thought I'd try growing them in containers. Roasties with spinach, feta and sundried tomato dip

These delicious roasted vegetables can be served as a meal by themselves.  Root vegetables of your choice (e.g. potato, kumara, carrot) Frozen Spinach, Silver beet or Rainbow Chard balls (see Freezing Vegetables) Sundried tomato, cashew and parmesan dip (or any other similar dip) For a variation I sometimes use Basil Pesto Feta, cut into cubes (optional) Prepare root vegetables into fairly small pieces (about 2cm).  I use enough to fill the roasting pan in a single layer.  … [Read more...]
