Whether you still have fresh feijoas on your trees or, like I have, frozen some to use later it is always good to have some new recipes to try. I have masses of limes and a big bag of desiccated coconut that needed using up so this feijoa, coconut & lime muffin recipe was perfect. 1 cup feijoa flesh, diced 2 tbsp lime juice 75g butter 3/4 cup sugar 2 eggs, separated 1/2 cup desiccated coconut 1 cup flour 1 tsp ground ginger 1/2 tsp baking powder 1/2 tsp baking … [Read more...]
Lemon Lime & Bitters Cordial Recipe
My lemon and lime trees produce copious amounts of fruit so I am always looking for different ways to use them. I've previously made various combinations of lemon, lime or lemon and lime cordials and even lemon barley water cordial. This time I decided to make a lemon, lime & bitters cordial recipe. 2 cups fresh lemon juice 1 cup fresh lime juice 3 slices lemon rind 3 slices lime rind 2 cups white sugar 1 tbsp Angostura bitters fresh mint, finely chopped … [Read more...]
Lime & Ginger Cheesecake Slice Recipe
Lime! Ginger! Cheesecake! Mmmm - heaven! This Lime & Ginger Cheesecake Slice recipe has everything going for it: the zinginess of lime and ginger and the soft creaminess of the cheesecake. You can serve it as a slice or jazz it up a bit with edible flowers and fruit for dessert. It freezes well so you can also serve it as a frozen cheesecake in summer. If you don't have limes you could switch these out for lemons or any other citrus. Base 1 packet gingernut biscuits 80g butter, … [Read more...]
Lime Curd Recipe
This Lime Curd recipe is a variation of one of my favourite lemon recipes - lemon curd (also called lemon honey or lemon butter). I was inspired to try this after making a delicious Lime & Ginger Cheesecake Slice. A simple alternative to that involves making gingernut biscuit cases and filling them with lime curd mixed with cream cheese or whipped cream or thickened yoghurt. You could of course use lemon curd but I love the combination of ginger and lime. Lime curd is delicious spread … [Read more...]
Fresh & Zingy Lime Marmalade Recipe
I have previously shared my Brandied Lime Marmalade recipe and my earlier not so successful attempts. Each year I get lots of limes on my tree so I've been hoping to find a recipe that would give me a fresh and zingy lime marmalade that wasn't too sweet but also not too tart and bitter. Success! I am really enjoying the results of this recipe. This month's NZ Gardener magazine had a feature on marmalade - trying to increase its popularity. Apparently the younger generations have not been … [Read more...]
Lime Pickle
My lime tree produces copious amounts of limes and when my friend Michele gave me a jar of lime pickle that you could add to coconut cream to make a simple chicken curry, I knew I'd found a winner - this is that recipe. Each year I make masses of lime cordial for friends and family but am always on the lookout for something to make with them beyond adding them a few at a time in lots of different recipes. 24 limes 1/2 cup sea salt 1/2 cup canola oil 1 onion, finely chopped 8 cloves … [Read more...]
Asian Chilli Dipping Sauce Recipe
This Asian Chilli Dipping Sauce recipe is my new favourite go-to sauce for serving with just about everything. Chilli, ginger, garlic and lime with a hint of fish sauce - perfect for dumplings or serve with cucumbers, celery, carrots and even corn chips. I have become quite a convert to chilli since growing it in my garden. This way you have a bit more choice over the heat of chilli that you prefer - I don't like them too hot. I made many bottles of Sweet Chilli Sauce and still had plenty … [Read more...]
Brandied Lime Marmalade Recipe
A few years ago I made a lime marmalade but it was so tart that there was no way you could even just have a scraping on your breakfast toast. I tried putting a spoonful in cooking but eventually just threw it out and never made it again. My mother asked recently if I had made any lime marmalade because she really likes the Roses Lime Marmalade for breakfast. So the challenge was on. Rummaging through my old recipe folders I found this one that I had made 20+ years ago. I still had some limes … [Read more...]
