It’s persimmon season again and my tree is laden with so many fruit that I have had to tie it to the fence to stop it falling over. What to do with them all? Despite the miserable summer, my persimmons have still produced a healthy crop so I've been looking for more ways of using them. My persimmon tree has established nicely now and is producing lots of persimmon (that I have to net to stop the birds from raiding). Mostly I prefer to just eat my persimmon fresh but now that I've got lots, I'm starting to think of different ways to use them. I discover that the answer to 'can you freeze persimmons?' is 'Yes' and share the Persimmon Clafoutis recipe that I made with them.
