Homemade Potato Gnocchi Recipe

November 10, 2023 By sue Leave a Comment

Enjoy your Homemade Potato Gnocchi goodness

I'm looking forward to the new potatoes coming soon in my garden but meantime I tried making Homemade Potato Gnocchi which is a great comfort food but you can make it healthy too by adding lots of greens and herbs to your tomato sauce. This recipe uses floury potatoes such as Agria. ~800 g floury potatoes 1 egg ¾ teaspoon salt 150 g flour Place whole potatoes on an oven tray and bake at 200C for about 1 hour (depending on the size of potatoes) until very tender . Cut potatoes in … [Read more...]

Vegetable Bubble and Squeak

February 28, 2020 By sue 1 Comment

Serve with eggs and avocado

This recipe is based on the traditional 'bubble and squeak' where all your leftovers are cooked up together to make a tasty meal the next day. I never have that many leftovers of things that would be suitable but this dish is so tasty that it is worth cooking everything especially for it. You can mix up the different ingredients depending on what you have in the fridge or garden at the time. If you are careful when you turn it out from the pan you can create an amazing looking dish that can … [Read more...]

Potato Waffle Recipe

April 18, 2016 By sue Leave a Comment

I've harvested a good crop of potatoes from my planter bags and have been looking for something different from the usual to make with them. I found this potato waffle recipe from a very old magazine cutting and decided to try it out for brunch. 4 large potatoes (about 800g), grated 1 large onion, grated 3 eggs, lightly beaten 1 tbsp olive oil Combine potatoes, onion, eggs and oil in a bowl. Drop about 1/4 cup mixture onto a heated greased waffle iron. Close iron, cook about 4 minutes or … [Read more...]

Thai-Style Potato Soup

December 30, 2014 By sue Leave a Comment

This is a simple, delicious and versatile soup. Instead of serving it in your usual soup dish, try serving it in glasses.  If you are having a party, you could serve it in shot glasses along with a range of other nibbles. 4 large potatoes, peeled and chopped 2 cups water 1 tsp chicken stock powder 2 tbsp Thai fish sauce Peeled rind of 1/2 lemon or lime 2 tsp minced coriander 1 cup coconut cream 1/4 cup lemon/lime juice Simmer the potatoes, water, stock powder, fish … [Read more...]

Growing Potatoes in Planter Bags

December 20, 2014 By sue Leave a Comment

Growing potatoes in planter bags is really easy.  It means you can grow them in a small space and that you don't have to dig the garden.  In Auckland we can grow potatoes all year round and I like to stagger the planting so that I have a bag ready for harvesting every month or so. If you are not ready for another harvest, you can simply move the bag under the eaves of the house so that it stays dry and the potatoes will store well until you want them. You will need planter bags, compost or … [Read more...]
