August 31, 2021 By sue Leave a Comment

Serve sprinkled with parsley

Butternut Pumpkins (also known as Butternut Squash) are a reliable crop in my garden, so I'm always on the lookout for different recipes to use them in. There are lots of Pumpkin Alfredo Pasta Sauce recipes online so I thought it would be a good thing to try. Alfredo Sauce is a rich, creamy Italian pasta sauce made from butter, cream, garlic and parmesan and usually served with fettucine pasta. Using pureed pumpkin and adding spinach and parsley is a great way to make it a bit … [Read more...]

Spiced Pumpkin Soup

I successfully grew quite a few butternut pumpkin this year and have been trying out a range of different pumpkin recipes. Stuffed Baked Pumpkin

Stuffed Baked Pumpkin

This year I got a great harvest of 8 decent sized butternut pumpkins (also known as butternut squash), so have been on the hunt for some different recipes to make. This stuffed baked pumpkin is really tasty and you can adjust the quantities to suit. You could also just make the filling and let it cook in a covered pan. 1 pumpkin (about 1kg) 2 cloves garlic, peeled olive oil 1 onion, peeled and finely chopped 1 small handful black olives, stoned and chopped (I substituted green … [Read more...]

Tandoori Roasted Pumpkin & Chickpeas

This year I managed to grow quite a good crop of pumpkins - actually they were butternut squash but you can use them just the same as pumpkins in cooking and I find them much easier to cut. I find that I am tending to eat a lot more plant-based meals these days and pumpkins are a go-to favourite to base meals around. This Tandoori Roasted Pumpkin & Chickpeas recipe is so simple and really tasty - the chickpeas go quite crunchy and add a nice texture. The recipe I tried put them into … [Read more...]

Pumpkin & Chickpea Tagine

I made this gorgeous rich and aromatic vegetarian pumpkin & chickpea tagine recipe using my single tiny pumpkin that I managed to grow this year. I'm a bit slow in posting this recipe due to my various travels this year but I hope you will enjoy it anyway. 2 tbsp olive oil 1 tbsp butter 1 large onion, chopped 2 cloves garlic, sliced 2 tsp ground cumin 2 tsp ground coriander 1 cinnamon stick ¼ tsp dried chilli flakes ¼ tsp saffron threads, steeped in 100ml hot water 500g … [Read more...]

Growing Pumpkins or Butternut Squash

May 8, 2016 By sue Leave a Comment

Butternut nestled in the marigolds

I've never grown pumpkins or butternut squash before because they take up too much precious garden space but this year I decided to plant one and see whether it could grow in amongst my other plants - with a surprising result. This worked well to start with and the plant trailed its way around, producing lots of flowers and little butternuts started forming. But it succumbed to powdery mildew very quickly and the little butternuts dropped as the leaves shrivelled up and died before I had a … [Read more...]
