Rhubarb Sauce Recipe

March 22, 2022 By sue Leave a Comment

Spoon into hot sterilised jars and seal

This versatile Rhubarb Sauce recipe is a great stand-by to have in the cupboard or fridge or freezer: you can spoon it as a sweet (but tart) sauce over icecream or pancakes, or use it as a marinade for chicken. I had rhubarb growing in my garden for years but eventually pulled it out when I decided that I wasn't really a big fan of stewed rhubarb (which was the only way I knew to use it) and that the precious space in the garden could be better used for other plants. More recently I have … [Read more...]

Rhubarb & Strawberry Crumble Recipe

November 18, 2020 By sue Leave a Comment

Rhubarb & Strawberry Crumble

This Rhubarb & Strawberry Crumble Recipe is perfect for using fresh season's strawberries and abundant rhubarb. Take it along to your pre-Christmas get-togethers for a tasty dessert. Fruit Fill a deep oven-proof dish half to two thirds full with fruit. I used 2 large stems of rhubarb, cut into 1-2cm pieces, and sliced strawberries. I don't add any sugar to the fruit because I like the tartness contrasting with the sweetness in the crumble, but add some if you prefer it … [Read more...]

Rhubarb & Strawberry Curd Recipe

November 11, 2020 By sue Leave a Comment

Top with curd and a piece of rhubarb

This rhubarb & strawberry curd recipe is a great way to enjoy these wonderful flavours throughout the year. You can use frozen strawberries and you can freeze the curd to enjoy later in the year. See my serving suggestion layering the curd with baked rhubarb and gingernut biscuits. ½ cup strawberries 4 medium stalks rhubarb, sliced ½ cm thick 2/3 cup caster sugar 90g butter 2 eggs 2 egg yolks 1/3 cup lemon juice Put all ingredients into a food processor and blitz until well … [Read more...]

Rhubarb Gin Recipe

Rhubarb Gin Recipe

I am really enjoying having rhubarb in my garden again. I always used to grow rhubarb for stewing but when space in the garden became a premium, I took it out and went many years without rhubarb. Now I am rediscovering what a versatile plant it really is, with so many different uses (see below for other rhubarb recipes). I have been making my own homemade gin and experimenting with different flavours such as blueberry gin, raspberry gin and yellow cherry guava gin so I thought I'd try a rhubarb … [Read more...]

Rhubarb Relish Recipe

June 17, 2020 By sue Leave a Comment

Rhubarb Relish

This delicious Rhubarb Relish Recipe is courtesy of my friend Beth who lives in Australia. I went to stay with her and took over a selection of my homemade preserves. She gave me a jar of this relish to take home, telling me it was great with toasted cheese sandwiches. OMG - it is divine with toasted cheese sandwiches!! I really needed to plant some rhubarb in my garden again so that I could make this recipe. 4 cups diced Rhubarb 2 cups diced Onions 2 cups White Vinegar 3 cups … [Read more...]

Rhubarb & Ginger Muffins Recipe

Rhubarb & Ginger Muffins

Rhubarb is such a versatile plant to have in the garden, particularly during lockdown. These Rhubarb & Ginger Muffins are great for dropping off as a surprise treat for your neighbours. I love the flavour combination of rhubarb and ginger (but then I like just about anything with ginger!).  The recipe is quick and easy to make, and the muffins freeze well too. Rhubarb is technically a vegetable as you use the plant stalks (the leaves are poisonous) but it is mostly used like a … [Read more...]

Rhubarb & Apple Crumble Recipe

Rhubarb & Apple Crumble

This Rhubarb & Apple Crumble Recipe is perfect for late summer when you have windfall apples to use up and rhubarb flopping over the vegie garden where you are wanting to plant your winter vegetables. Using cardamom in the crumble adds an extra layer of flavour. Fruit Fill a deep oven-proof dish half to two thirds full with fruit. I used 2 large stems of rhubarb, cut into 1-2cm pieces, and 4 windfall apples, peeled, cored and roughly chopped. I don't add any sugar to the fruit … [Read more...]

Rhubarb & Strawberry Jam

January 30, 2020 By sue Leave a Comment

Rhubarb & Strawberry Jam with scones and cream

Rhubarb & Strawberry Jam is such a great combination - the tang of the rhubarb balances out the sweetness of the strawberries. I have made the recipe twice this year: once in spring with fresh strawberries and again later once the rhubarb had regrown, with frozen strawberries. The jam goes wonderfully with scones and cream. 500g strawberries (can use fresh or frozen) 500g rhubarb 1kg Jam Setting Sugar Knob of butter (about 10g) Hull the strawberries and chop the rhubarb into 1cm … [Read more...]

Rhubarb & Banana Jam

March 1, 2019 By sue Leave a Comment

Rhubarb & Banana Jam

Late summer in the garden: rhubarb flopping everywhere, huge bunches of bananas ripening at once, and then reading in a gardening magazine that Rhubarb & Banana Jam is a thing - and a delicious one at that. Who would have thought it? I wasn't 100% convinced to start with so I added a few strawberries as well to give it some more flavour and juice, and used a tried and true simple jam making method that uses jam setting sugar (with pectin already included for you). 500g rhubarb … [Read more...]
