Gift of Chai Tea

P1040120On my trip to India I went to a cooking class and learnt to make the authentic chai tea that is shared to welcome guests.  I have a friend who likes tea, travel and cooking so I thought that some chai spice would make a nice gift.  When she visited me I made her the tea and showed her how to make it as well.

Chai Spice  Equal amounts of ground:

  • Green Cardamom
  • Black Pepper
  • Cloves
  • Nutmeg
  • Mace
  • Dry Ginger

Bring 1 cup of water to boil in a saucepan.  Add 1/2 tsp spice* and 2 tsp sugar.  Boil 1 minute and add Assam Tea (I use 1 teabag per person).  Boil a further 1 minute and add 1/2 cup milk.  Bring to a full boil so that the milk foams to the top of the pan, take off heat until the foam subsides and return to the heat.  Boil and let subside 5 times.  Take off heat and cover for 2 minutes.  Strain into cups.

* when doubling the recipe add only another 1/4 tsp of spice.
