Raspberry Cordial Recipe

Raspberry CordialLooking for a wow factor for your festive drinks? Then this raspberry cordial recipe is for you. It couldn’t be simpler to make and “it tastes just like you are drinking fresh raspberries”! Add some sparkling wine and you’ve got a fabulous new year’s eve starter. Or just add some sparkling mineral water, a sprig of mint and an umbrella for a treat for those not drinking alcohol.
This is perfect if you have raspberries growing in your garden but store-bought frozen raspberries work just as well. Raspberries to me are the taste of summer and even though I grow my own and manage to freeze quite a few as well as just scoffing them straight from the garden, it still feels like such a treat to be able to make something as seemingly decadent as this. And it is wonderful to serve as something special when friends and family visit.
500g frozen raspberries
2 cups caster sugar
Chilled sparkling wine or sparkling mineral water, to serve
Gently heat raspberries in a medium saucepan to thaw.
Add sugar and cook over a low heat, stirring, for 1 minute or until sugar dissolves.
Increase heat to high and bring to the boil. Cook, stirring, for 2 minutes or until syrup thickens slightly. Remove from heat.
Transfer to a sieve and strain into a medium glass bowl.
Pour into a sterilized bottle and seal. It will store well if it ever gets a chance.
To serve:
Pour cordial among glasses, top with sparkling wine or mineral water and ice.
Thaw raspberries
Add caster sugar
Boil

Strain through sieve
… into a glass jug
Pour into bottles
