Fresh figs are a real treat if you have a tree in your garden because you virtually never see them in the shops. My figs always seem to ripen at the same time as lots of other things so I generally throw them in the freezer so that I can preserve them later. Recently I have been trying out different fig chutney recipes – this one is made with apple and raisins. Watch out for some other recipes to try.

Frozen figs
2 cups figs (fresh or frozen)
1/3 cup apple
1/2 cup onion
1/3 cup raisins
1/2 cup brown
1/2 cup apple cider vinegar
1/2 tsp salt
1 tsp ground ginger
1/2 tsp ground cloves
1/4 tsp ground nutmeg
Remove the stems from the figs and cut them into quarters.
Peel, core and chop the apple.
Chop the onion.
Soak raisins in a bowl of hot water for 10 minutes.
Put the sugar and vinegar in a preserving pan and heat gently until the sugar dissolves.
Add the figs, apple, onion, raisins, salt and spices.
Add the figs, apple, onion, raisins, salt and spices.
Bring to a boil, then reduce to low heat and cook for about an hour, stirring frequently.
Spoon the chutney into hot sterilised jars.
Store for a few weeks to let the flavours develop before enjoying.

I have made a number of jars of this delicious chutney. It is very quick and easy and tastes amazing. Thanks for recipe. I am going to try using dried cranberries in another batch just to see if that works too cheers, Vicki.
Thanks for the feedback. I’d love to hear how the cranberry version turns out.
