Three Seed Brittle Recipe

I’ve previously posted about adding more nuts and seeds to your diet through seasoning blends. You can also include more of these healthy foods through making them into Seed Crackers. This Three Seed Brittle Recipe is a delicious way to enjoy a sweet but healthy treat.

1 cup pumpkin seeds
3/4 cup sunflower seeds
1/4 cup sesame seeds
2 tsp ground cinnamon
1 tsp ground ginger
1/2 tsp group allspice
1/2 tsp sea salt
1/3 maple syrup
1 tsp vanilla extract

Put all the ingredients in a large bowl and mix until well combined.

Spoon mixture onto a lined baking sheet and press into an even layer about 3mm or 1/8 inch thick.

Press the middle slightly thinner than the edges to prevent the outside edges from burning.

Bake for 30mins at 160C or until golden brown.

Remove from oven and allow to cool completely. As it cools it will become crispy.

If the brittle doesn’t become crispy after it has cooled, put it back in the oven and bake for another 8-10 mins (I generally do this anyway).

Once the brittle has crisped up, break it into pieces.
