Mushrooms are known for their health benefits and with a savoury umami taste and meaty texture they can be a great alternative to meat in meals. Including a variety of different mushrooms in your diet is as important as including more fruit and vegetables. You can use dried mushrooms to make a mushroom seasoning salt or umami seasoning powder that you can add to enhance almost any savoury dish.
I have been enjoying growing my own mushrooms at home – especially different Oyster mushrooms (as they are FODMAP friendly if you have gut issues). They are also the easiest of the mushrooms to grow. It is also great to have the opportunity to grow some of the more unusual varieties such as shiitake and lion’s mane. I have been drying a range of different mushrooms and adding them when I make bone broth or soup, and of course using them in this Umami Seasoning Powder recipe.
- Oyster Mushrooms
- Shiitake Mushrooms
30g dried mushrooms (use just oyster mushrooms or a blend of your choice)
1/4 cup onion granules or powder*
2 tbsp mustard powder
1 tbsp salt
1 tbsp paprika
1 tsp black pepper
1 tsp thyme
*You can omit the onion if you are intolerant of onions/garlic
** Optional: add 3 tbsp nutritional yeast to give a more ‘cheesy’ flavour and 1-2 tbsp garlic powder if tolerated.
Grind any ‘lumpy’ ingredients to a fine powder in a spice grinder. Add remaining ingredients and stir to combine. Store in an airtight glass jar.
Add liberally to soups, stews, casseroles and more. Allow to cook a bit to dissolve full and incorporate the flavours.
