I’ve previously shared my efforts at making Homemade Mayonnaise – it was successful but it only lasts a week and you can’t really make a smaller amount because it uses one egg. So I have been experimenting with an easier and much more flexible recipe using lactose-free yoghurt instead of the egg. I love it because I can easily incorporate lots of healthy herbal goodness by using herb-infused vinegars and herb-infused oils.
I make up small batches of vinaigrette using roughly equal amounts (or whatever ratio you prefer) of oil and vinegar in a jar along with a spoonful of dijon mustard. These are easy to add to salads or if you need a mayonnaise you can just mix it into some yoghurt. It emulsifies really well and I really like the end result.
The series of photos below show how I start with a couple of spoonfuls of yoghurt, add some vinaigrette and stir until well incorporated; then add more vinaigrette and repeat the process until you get a consistency that you like. Use as you would ordinary mayonnaise: in coleslaw, potato salad etc.
- Vinaigrette: half oil and vinegar and a spoonful of mustard
- A couple of spoonfuls of yoghurt then add some vinaigrette
- Stir until incorporated
- Add more vinaigrette
- Stir until incorporated
- Add more vinaigrette
- Continue until you have the mayonnaise consistency you desire
- Yoghurt mayonnaise
- Add to your favourite salad
- Potato and egg salad
