Yellow Cherry Guava Gin Recipe

Yellow Cherry GuavasAutumn is a bountiful time for harvesting fruit and guavas are a seasonal favourite. I have been growing red cherry guavas for years and have previously shared recipes for cherry guava jelly and cherry guava cordial that look fabulous made with red cherry guavas. More recently I planted a yellow cherry guava as well and have just added the few yellow fruit to the red ones. Now that I am getting a reasonable harvest of yellow cherry guavas I thought it was about time to make something different with them and tried making a Yellow Cherry Guava Gin.

4 cups yellow cherry guavas
1/2 cup caster sugar
1 litre gin (even better if it is homemade gin)

Mash up the guavas with a potato masher and then add all the ingredients into a large jar with a sealable lid.

Store in a cool, dark place for a month, shaking gently every day for the first week, then once a week to dissolve the sugar. The gin takes on a golden colour as it ages.

Strain the gin through a muslin-lined sieve but don’t mash the fruit as it will make the gin cloudy. Decant into sterilised bottles (use a fancy bottle if giving for a gift).

I found this gin to be quite sweet without a lot of bite, but it is delicious served with a good tonic.
